But if you place an automated capsule part onto each separtion stage you can go to that detached part and fly it using the keys as long as its close (or the tracking station if not close). Once a stage is jettisoned (ie not connected to your rocket) you cannot activate any more stages on it whilst flying the main rocket. This way you can set up two boosters to separate on their own by putting their detachment manifolds in separate stage and then also put their pushing SRB boosters in the same stage to push them away as they detach. When you mouse over the stage item in the list the relevant item on the rocket glows to show you which part it relates to. Normally I create small boosters onto each separating side booster to push them way when they separate - these appear in then list as SRBs, but need moving into the stage with the relative detaching manifolds so they all activate together. Your last stage is usually your parachute on your reentry capsule. Your first stage should usually be all your main launching engines plus your stabilisation clamp releasing. Sometimes items such as boosters are grouped together it will expand to let you pick one or two of them. You can move around stages and create stages whilst in flight, not just in the VAB, using the +/- buttons to create/remove empty stages and then you click on each item and drag it into the stage you want it in. Sometimes you accidentally press the button twice in which case you can activate two stages at the same time in quick succession so by careful. Perhaps change your key for staging to TAB then you wont press it accidentally.

This way you can choose which engine to use as a main engine in a command capsule/lander docked group for example.

But note you can manually activate engines not in the current stage by right clicking on them in the rocket itself. If the fuel bar doesnt appear the engine isnt active yet. Sometimes you have to press spacebar again to get to the engine activation stage I find - in which case you see the fuel bar appear when the engine stage is the active one.

The current stage is shown by the number below the list. Staging goes from bottom upwards, each time you press spacebar you activate one stage.
